Moist apple‑studded fritters baked to golden perfection and coated in sweet cinnamon‑vanilla glaze—perfect for cozy mornings.
For the Fritters:
¾ cup all-purpose flour
¾ cup white whole wheat flour (or extra all-purpose flour)
½ cup brown sugar
2 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
¼ tsp allspice
¼ tsp salt
6 Tbsp cold butter, cut into pieces
½ cup milk (whole milk for richer texture)
1 large egg
1 tsp vanilla extract
1 cup chopped apples (Granny Smith or Honeycrisp preferred)
For the Glaze:
1 cup confectioners’ sugar
2 Tbsp milk
1 tsp vanilla extract
Preheat & Prep: Preheat the oven to 400 °F (200 °C). Line a baking sheet with parchment paper.
Mix Dry Ingredients: In a large bowl, whisk together both flours, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
Cut in Butter: Add cold butter and cut it into the dry mixture until it resembles coarse crumbs.
Mix Wet Ingredients: In a separate bowl, whisk together milk, egg, and vanilla.
Combine: Pour wet ingredients into the dry ingredients and stir until just combined. Gently fold in chopped apples.
Scoop & Bake: Drop batter by ¼-cup scoops (or use tablespoons for mini fritters) onto the prepared baking sheet. Bake for 11–13 minutes (8–11 minutes for minis) until the bottoms are golden and the centers are set.
Glaze & Broil: Switch the oven to broil. Whisk together glaze ingredients until smooth. Brush a thin layer of glaze over each fritter, then broil for 2–4 minutes until the tops bubble and caramelize—watch closely to avoid burning.
Final Glaze: Remove from the oven, transfer to a wire rack, and brush with remaining glaze while still warm. Let it set before serving.
For mini fritters, scoop with tablespoons and reduce bake time slightly.
Broiling after glazing creates the crispy, caramelized finish, but skipping it is fine if you’re in a rush.
Firm, tart apples like Granny Smith or Honeycrisp work best, but feel free to experiment with pears or peaches.
For a gluten-free version, use a 1:1 gluten-free flour blend.
For extra citrus flavor, add lemon or orange zest to the batter or glaze.
