This warm, cinnamon-spiced mug cake is packed with protein from cottage cheese and egg—ready in minutes for a healthy, cozy treat.

Ingredients

½ cup cottage cheese

1 egg

3 tbsp oat flour (or almond flour for gluten-free)

12 tsp honey or maple syrup (optional, for sweetness)

2 tbsp diced apple (peeled if preferred)

½ tsp cinnamon

¼ tsp baking powder

Pinch of nutmeg

Pinch of salt

Sprinkle of cinnamon

Dollop of Greek yogurt

Instructions

In a blender or small bowl, mix cottage cheese and egg until smooth.

Stir in oat flour, baking powder, cinnamon, nutmeg, salt, and sweetener (if using).

Fold in diced apples.

Pour the mixture into a greased mug or ramekin (at least 8 oz).

Microwave for 1½–2 minutes until the center is set. Check doneness with a toothpick.

Let cool slightly. Top with extra apple, cinnamon, or Greek yogurt if desired.
